I actually used to be very intimidated by grilling pizza. I had a couple of bad experiences but then I got my method straight. Its not hard, but you do need to be organized.
When you grill pizza, you need to have everything ready to go all the toppings, the sauce, the cheese. This is because the key to pizza on the grill is to top the pizza after youve put it on the grill. It also helps if you cook the dough for a minute or two, flip it, and then top it.
How To Pick The Perfect Dough For A Grilled Pizza
Sure, you could make your own pizza dough. Weve tried, with expert advice from the Pizza Lupo team. But, lets just say theres a reason that team runs a successful pizzeria and we dont.
Pizza dough is an art and science that takes a whole lot of finesse. We need to keep things simple, so my husband I grab pre-made doughs from Lotsa Pasta, 3717 Lexington Road. The same pre-made dough is also often available at Pauls Fruit Market shops in the freezer section.

Id forgotten the friendly rivalry weve had with these friends over a couple Old Louisville neighborhood chili cook-offs, but it all came back when we started cutting up our pizzas and passing them around to compare.
Naturally Im biased, but I loved my concoction of the following: olive oil brushed on the crust, apricot cheese, fresh mozzarella our friend brought from Harveys Cheese Shop, shredded mozzarella, crumbled blue cheese, dates, scattered bites of cooked bacon from Red Hog Restaurant & Butcher Shop, 2622 Frankfort Ave., shallots, fresh basil, arugula, and salted honey.
We also had a supreme on deck with all the meats and veggies, a half and half extravaganza, and a delicious ham and bacon plus dates, cheese, and sriracha sauce pie.
Im calling it a tie between that one and mine, but when youre gathered around a table sharing a meal with friends that didnt cost an arm and a leg and allowed you to get rid of some items in your kitchen everyone wins.

Yes, you can grill pizza! You can grill pizza on any type of grill, but we think its easier and tastes better when grilled on a Traeger. When lighting up your charcoal grill, be sure that the coals get to cooking temperature and void placing the pizza in the charcoal grill while dirty smoke from the coals is present.
2) Let the grill get to temperature if you are using a pizza stone, preheat the stone, or cook directly on the grates, let the grill get to the appropriate temperature.

The Best Tomatoes For Homemade Pizza Sauce
The sauce typically found on a Neapolitan-style pizza consists of really good canned San Marzano tomatoes and frankly not much else. Its the kind of sauce that shows how using a few high-quality ingredients can positively impact a recipe.
I typically search for canned San Marzanos at my neighborhood market. A number of brands are becoming more available these days, but hands-down my favorite is Bianco Di Napoli, which was co-founded by James Beard Award-winning pizza chef Chris Bianco of Pizzeria Bianco. My Pizza Is Cooking Too Fast
If your pizza crust is getting crispy or charred a little too quickly, your cheese wont melt and your crust will burn. If you see that this is happening to you, your grill is too hot. Reduce the heat or push some of the charcoal to one side to create a hot side and a cooler side. Next, once your pizza is cooked on the one side, remove it from the grill to a baking sheet, add the toppings and then slide it back on the grill to finish cooking.

Most of us probably associate cooking pizza with an oven, but have you tried wood-fire grilling pizza?
One reason to love grilled pizza is because grills can get hotter than a conventional oven. A Traeger can reach 500 degrees Fahrenheit .
Another reason to grill your pizza is that a grill, especially a wood pellet grill like a Traeger, adds that traditional wood-fired flavor to your pizza. Its an authentic flavor usually reserved for pricier pizza parlors.
How To Use A Pizza Stone On A Pellet Grill
To use a pizza stone on a grill, you simply preheat your Traeger to 500 degrees Fahrenheit with the pizza stone on top of the grill grates. It takes a pizza stone about 30 minutes to completely heat up, so dont add your pizza too early. A Traeger typically only takes about 15 minutes to preheat, but its worth the extra wait, we promise.

Making Ahead And Scaling Up
You can easily double or triple this sauce for a pizza party or just to have extra when a weekday pizza craving hits.
Whenever I make a big batch, I like to divvy up the sauce into half pint deli containers and freeze it. That way I always have sauce at the ready when Im in the mood for pizza.
The sauce should last about 3 months in the freezer, but Ive also kept it in the freezer for about 6 months with no problem. Pop the sauce in the fridge the night before to thaw it out.
Stored in the refrigerator the sauce will keep for about a week.
How To Raid Your Fridge And Pantry For Pizza Toppings
Ok, you’ve made your crust. Now, what do you put on the pizzas? For the summer of grilled pizza, anything and everything goes.
Our friend wanted to try a home version of a bacon and date pizza from Noble Funk Brewing Co., 922 S. 2nd St., so she graciously brought several ingredients for that, including arugula and dates, plus some other goodies.
I often like a classic tomato/basil/fresh mozzarella situation, so we planned on those ingredients. And then while I was picking up wine at Logan Street Market, 1001 Logan St., my husband who likes a supreme pizza assembled a veritable smorgasbord of random things from our fridge and pantry that I added to when I got home and dug through the produce and cheese sections of our fridge.
Leftover cheeses and hams from a charcuterie board we shared recently? The last few spoons of crumbled blue cheese in the container? Sold!
We also caramelized some shallots, filled a bowl with shredded pizza cheese, made a simple sauce of canned Pomi sauce with a handful of fresh herbs, and added a few more goodies to the spread like smoked honey, sriracha mayo, Bourbon Barrel Foods seasonings, and fresh basil.

Why We Loved Grilled Pizza
Grilled pizza dough is soft, slightly chewy, flavorful, and easy to make. Its the perfect way to enjoy pizza without turning on the oven!

Make The Sauce Your Own
I like to think that the following red sauce honors the spirit of two classic Neapolitan pizzas: marinara sauce and the margherita .
My recipe, a loose riff on , is one that I’ve been making for years, and it couldnt be easier. Seriously, you dont even have to do any chopping!
Crushed San Marzano tomatoes are briefly simmered with onion halves and smashed garlic cloves, along with a few sprigs of basil, dried oregano, a pinch of kosher salt, and crushed red pepper flakes. I stir in a splash of really nice extra-virgin olive oil at the end to lend a hint of richness to the sauce. Thats it.
Once youve gotten the base recipe under your belt feel free to mix things up with different herb, spices or add-ins.
- Crushed fennel seeds
- Dried marjoram
- Leftover Parmesan rind
As for how much sauce to use per pizza, I usually go fairly light, using only about 1/4 cup per 10-inch pizza, so the pizza dough can get crisp as it cooks. This recipe yields about 3 cups of sauce, which is enough for about a dozen pizzas. If you like a saucier pie, feel free to add more.
