Start by lighting Kingsford® Charcoal, either in a chimney or a free-standing mound of 100 briquets. We recommend Kingsford® Professional for its higher top temperature and consistent burn. To achieve a great sear, be sure to get your grills heat as high as possible, around 425ºF for an electric grill.
For a thick ribeye, youll want to arrange your coals into a two-zone fire. Replace the top grate, allow it to heat up all vents should be fully open then pour cooking oil on a folded paper towel and oil the grate using long-handled tongs.
Remove your ribeye steaks from the refrigerator and let them reach room temperature around 30 minutes. Trim excess fat to avoid flare-ups and vertically slash the thin piece of fat around the outside of the steaks to prevent curling. Liberally apply coarse salt and freshly ground pepper. Flip the steaks and repeat the process.
Place your ribeye steaks directly above the coals and sear for two to three minutes per side. To ensure perfect grill marks, resist the urge to move the steak while cooking. Close the lid to prevent flare-ups.

The best ribeye steaks for grilling are labeled as USDA Prime or Wagyu. USDA Prime is the highest grade ribeye steak can get from the USDA. Wagyu is considered the cream of the crop in the steak world, denoting steaks that come from Wagyu beef and are among the highest overall quality.

A rough estimate to get to a 140° internal temperature with a 450° grill will be 10 to 14 minutes. But this is highly variable due to the exact grill temperature, the thickness, and initial temperature of the steak, and your desired final internal temperature.
So, when is it done for you? There is a lot of snobbiness about this. The “rare” people will unfriend you on facebook if you disagree. Most of the pink will disappear at about 155°.
You like what you like. But if you haven’t tried your steak a little rarer, I suggest trying to “work your way down” on good filet or ribeye. Don’t jump from well done to rare. Go down by five degrees at a time.
I like 140°-145° now after growing up in a “burn it to black” family. I doubt I will go lower. I like “hot” steak, and below 140°, the steak is only warm to me. Remember you can always toss it back on the grill for a few minutes.
The rest period after removing the steak from the grill, which is needed for the meat to reabsorb some moisture back into the cells, will increase the temperature 2-5 degrees.

How To Make It
Preheat. Start by preheating your grill to high heat.
Prepare the steaks. Before cooking, allow the steaks to come to room temperature for about 30 minutes. This helps the steak cook evenly while grilling. Place the steaks on a platter and drizzle with olive oil on both sides. Season with salt and pepper, liberally, on both sides.
Grill. Transfer the steaks to a hot grill and cook for 4-5 minutes on each side for medium-rare, I like to remove them once they read around 130F on an instant read thermometer.
Rest. Transfer the steaks to a platter and cover with foil. Allow to rest for 10 minutes.
