- Rest: Remove the pork chops from the grill and let rest for 3 minutes to seal in the juices and flavor.

- 4. Glaze and serve: Transfer the chops to a dish and drizzle with the leftover brinerade. Allow for five minutes of rest before serving.

Is It Possible For Pork Chops To Be Pink
Sure, you can use a poke test or a skewer to see if the fluids flow clear, but these methods dont guarantee that your meat is cooked to a safe temperature.
Slice into the meat after it has rested for at least 5 minutes it should be pale white with a tinge of pink. At 145F, your pork is at a medium rare temperature, therefore the color doesnt mean anything. If youd expect pink in a medium-rare steak, dont be startled if you see it in your pork chops!
If the pink color bothers you, cook it until it reaches 155 degrees Fahrenheit. Itll still taste good, but it wont be as juicy. If you cook it any longer than this, youll need a decent sauce to cover up the dry pieces.

Preparing Pork Chops To Grill
What Chops to Choose: Any pork chop will work, but I prefer a center cut 1 inch thick, either bone-in or boneless. ¾ inch is a little thin and can dry out more. A brine will help some, but you will be happier with thicker.
Chops thicker than 1 ½ may require either reverse searing or some time over indirect heat. I usually don’t do these thicker chops since I consider them too big for a serving.
Trim the Fat Layer: There is usually a layer of fat on the edge any pork loin. I suggest trimming it, but others think it adds some flavor and helps prevent drying. If not trimmed, it may cause “cupping,” complicating the grilling.
If the fat layer is over ¼ inch, trim it to ¼ inch thick and score every inch to prevent cupping of the pork during cooking.
Prepare Your Pork Chops With Rubs And Seasonings
Even if its just salt and pepper, I recommend seasoning your pork at least a few hours before they hit the grill. I usually season the meat the day before and let it rest in the fridge overnight. I decided to use Weber Dry Smoking Rub. Its a good general rub for all kinds of meats. I like a variety of rubs so pick out your favorite and run with it.

How Long Should A 1 Inch Pork Chop Be Grilled
Cooks have been advised for years to cook pig until it is well done, resulting in a dry piece of meat that no one wants to eat. No longer!
Pork cooked medium rare is now safe to eat, according to latest USDA rules. Cook the pork chops until they reach an internal temperature of 140 degrees Fahrenheit and are still somewhat pink inside, then set aside for 5 minutes to allow the residual heat to continue to cook and raise the internal temperature.
Cook thin sliced, bone-in pork chops approximately 1/4 inch thick over direct medium-high to high heat for 3-5 minutes, flipping once, over direct medium-high to high heat.
Cook for 8-12 minutes over direct heat, flipping every 3-4 minutes or until fully grill marked, with the lid closed, for 1-inch thick boneless pork chops. Allow an additional 5 minutes for the fluids to settle in the meat.
If the pork chops are cooked properly, they will release some juice while they rest, indicating that they are still juicy on the inside.
