The weather is getting warmer and the zucchini is getting in gear for full bloom this summer season, although living in California does have its luxuries with year-round zucchini.

But for those of you who dont have zucchini readily available 365 days out of the year, its time to dust off that grill for these crisp-tender zucchini rounds.

Now these zucchini rounds are first tossed in a lemon butter garlic sauce a sauce so good, you may want to double the sauce portion and serve some on the side with a spoon.

What To Serve With Grilled Zucchini

Serve this grilled zucchini recipe as a side dish with whatever youre grilling! It would also be fantastic with a summer pasta like this penne, linguine, pasta pomodoro, or pesto pasta. Itd be great with a hearty couscous or pasta salad too.

Alternatively, get some good crusty bread or pita, add few handfuls of roasted chickpeas, and call it dinner on its own! For a gluten-free alternative, scoop up the yogurt with wedges of socca.

How To Slice Zucchini For Grilling

When it comes to slicing zucchini for the grill, you have two options: Cut the zucchini lengthwise into thick steaks, or thinly shave zucchini into ribbons. Avoid slicing zucchini into rounds, which require constant flipping and can easily fall between the grates.

Thick zucchini steaks have a large surface area for grill marks, and therefore pick up a lot of smoky flavor. Theyre easy to maneuver, too. Serve these veggie steaks as-is, or chop them into 1-inch pieces and toss with herbs and salty cheese.

Zucchini ribbons are much more delicate and cook more quickly. Thinly shave zucchini into ribbons with a Y-peeler or mandoline, then weave them accordion-style onto skewers. Toss the grilled ribbons with other grilled veggies for a summery salad, pile them high atop tender shrimp or planks of grill-marked halloumi, or swirl them into grilled gnocchi.

How you cut zucchini and squash for grilling can drastically affect cooking time. I slice mine into & frac13 ½ medallions. A lot of people like to do ribbons, but I find the medallions both more difficult to deal with when slicing, and later while cooking the squash on the grill.

The medallions are surprisingly easy to work with! I dont even use a grill pan or foil, although I provide instructions for using all methods below, for those who wish to do so.

Grilled is one of the healthiest ways to eat zucchini, because the grill imparts big-time flavor without the need for extra fat.

However, all grilled zucchini is not created equal.

If youve been a victim of soggy, mushy zucchini, you know what Im talking about.

To grill zucchini without it getting soggy, you need to do two things:

  • Cut the zucchini appropriately. I recommend quartering the zucchini lengthwise into batons .
  • Grill over medium high heat . This is hot enough to crisp the outside, but not SO hot that the zucchini burns before the inside can become tender.

    • The ideal size zucchini for grilling is what I call medium large. That would be 7 to 8 inches long.
    • But you can grill zucchini that is bigger if you happen to have it.
    • I dont recommend grilling the mega zucchinis that you left for too long and are the size of a chiuaua. They are too punky and seedy. Instead use them to make zucchini soup.

    For me, it was after a few beers and a stroll around the glowing stalls of a night market in Germany. The cobblestone pathway leading to a massive fire pit and then, there it was, loaded with meat and swinging away in the open air.

    The contraption, called a schwenker, dangled dangerously close to the hot flames while three large men with medieval looking meat hooks circled around it and sipped beer.

    A schwenker is a heavy-gauge German-style grill that is suspended beneath a tripod by metal chains. They’re tough. They’re primal. And they’re ridiculously awesome.

    For thinner sliced zucchini, like those cut into thin planks or coins, they may cook more quickly needing just 3-4 minutes per side.

    Whenever you are grilling zucchini, you will want to flip it over so that you can get grill marks and that delicious charred taste on both sides.

    Will A Grill Pan Or Indoor Grill Work For This Recipe

    If you dont have an outdoor grill this recipe will work with an indoor grill or grill pan.

    Depending on how hot your grill pan or indoor electric grill gets, you might have to cook these a little bit longer to get the zucchini cooked to your liking.

    If you cook it on an indoor grill, it wont have that great outdoor grill taste that we love. But you can make up for it a little by sprinkling on smoked salt to get closer to that outdoor grilled flavor.

    This easy grilled zucchini recipe uses just a few ingredients, but its loaded with tangy flavor and lots of yummy textures. Heres what you need to make it:

    • Zucchini! A mix of yellow squash and zucchini would work here too.
    • Lemon. I squeeze the juice over the hot grilled zucchini and mix the zest into the creamy yogurt base.
