How To Slice Zucchini For Grilling
When it comes to slicing zucchini for the grill, you have two options: Cut the zucchini lengthwise into thick steaks, or thinly shave zucchini into ribbons. Avoid slicing zucchini into rounds, which require constant flipping and can easily fall between the grates.
Thick zucchini steaks have a large surface area for grill marks, and therefore pick up a lot of smoky flavor. Theyre easy to maneuver, too. Serve these veggie steaks as-is, or chop them into 1-inch pieces and toss with herbs and salty cheese.
Zucchini ribbons are much more delicate and cook more quickly. Thinly shave zucchini into ribbons with a Y-peeler or mandoline, then weave them accordion-style onto skewers. Toss the grilled ribbons with other grilled veggies for a summery salad, pile them high atop tender shrimp or planks of grill-marked halloumi, or swirl them into grilled gnocchi.
Ways To Use Grilled Zucchini
You can eat grilled zucchini as-is as a side dish, but I often make extra grilled zucchini to use in other recipes during the week.

How you cut zucchini and squash for grilling can drastically affect cooking time. I slice mine into & frac13 ½ medallions. A lot of people like to do ribbons, but I find the medallions both more difficult to deal with when slicing, and later while cooking the squash on the grill.
The medallions are surprisingly easy to work with! I dont even use a grill pan or foil, although I provide instructions for using all methods below, for those who wish to do so.

- The ideal size zucchini for grilling is what I call medium large. That would be 7 to 8 inches long.
- But you can grill zucchini that is bigger if you happen to have it.
- I dont recommend grilling the mega zucchinis that you left for too long and are the size of a chiuaua. They are too punky and seedy. Instead use them to make zucchini soup.

How To Store And Reheat Grilled Zucchini Recipes
Store any leftover zucchini in an airtight container in the fridge. Do keep in mind that reheated leftover grilled zucchini isnt ever going to be quite as delicious as just-off-the-grill zucchini, but to get it as close to that as possible, we recommend reheating it in a pan on the stove over medium-high heat with a little bit of EVOO.

You never forget your first schwenker.
For me, it was after a few beers and a stroll around the glowing stalls of a night market in Germany. The cobblestone pathway leading to a massive fire pit and then, there it was, loaded with meat and swinging away in the open air.
The contraption, called a schwenker, dangled dangerously close to the hot flames while three large men with medieval looking meat hooks circled around it and sipped beer.
A schwenker is a heavy-gauge German-style grill that is suspended beneath a tripod by metal chains. They’re tough. They’re primal. And they’re ridiculously awesome.
You’re most likely to find these tripod grills in backyards and festivals in the Saarland and Rhineland-Pfalz regions of Germany, from where they originated, but they’ve duly developed a cult following that extends far beyond the German borders. There are camping versions, homemade versions, and, yes, the world’s biggest schwenkers.
“Propane can’t touch cooking over wood on an ancient European grill,” says Neil Murphy, corporate chef at Merriman’s Restaurant in Hawaii, where he’s been grilling with a schwenker since 2011.
“It’s kind of like a rotisserie but not,” Murphy says. “Three people station themselves around the schwenker and push the grill with a stick back and forth over the fire. Beer is a must, and you just drink with others and keep slowly pushing the grill over the fire until the food is cooked.”

- Avocado oil you can also use extra virgin olive oil or any other oil you like or have on hand.
- Fresh Lemon Juice and Lemon Zest adds a bright and refreshing flavor.
- Zucchini Seasoning: A must for making your grilled veggies shine. You can use any combination of seasonings you like. We opted for garlic powder, dried parsley, kosher salt, freshly cracked black pepper and optional Crushed Red Pepper.
- Fresh Herbs: Chopped fresh basil. Dont have fresh garden basil? Use fresh parsley, cilantro or oregano instead!

Do You Rinse Zucchini After Salting
Definitely not. You only need a little salt half a teaspoon of kosher salt for one medium zucchini, say to start pulling the water out. Use more, and the zucchini will simply taste like zucchini-flavored salt. If you try to rinse out the extra salt, you risk adding back in the water you just tried to get rid of.

Go ahead and add some onions to the zucchini foil packs for another great option. The onions cook perfectly with the zucchini and really add a great layer of flavor.

How Long Do You Grill Zucchini
Zucchini will take about 10 minutes to grill on medium heat, with the grill between 350-375 degrees. This is the ideal temperature for grilling zucchini so that the zucchini doesnt burn on the outside before it is cooked through.
For thinner sliced zucchini, like those cut into thin planks or coins, they may cook more quickly needing just 3-4 minutes per side.
Whenever you are grilling zucchini, you will want to flip it over so that you can get grill marks and that delicious charred taste on both sides.

Will A Grill Pan Or Indoor Grill Work For This Recipe
If you dont have an outdoor grill this recipe will work with an indoor grill or grill pan.
Depending on how hot your grill pan or indoor electric grill gets, you might have to cook these a little bit longer to get the zucchini cooked to your liking.
If you cook it on an indoor grill, it wont have that great outdoor grill taste that we love. But you can make up for it a little by sprinkling on smoked salt to get closer to that outdoor grilled flavor.

Lets be honestsometimes, you cant eat it all. If you happen to have leftovers, all you need to do is store in an airtight container and place in the fridge. When it comes time to reheat, place in your microwave for about 30 seconds. Warm-up to temp and eat.
Keep in mind that the zucchini probably wont be as firm as they were when they were taken off the grill, but the flavor and taste will be the same.

This easy grilled zucchini recipe uses just a few ingredients, but its loaded with tangy flavor and lots of yummy textures. Heres what you need to make it:
- Zucchini! A mix of yellow squash and zucchini would work here too.
- Lemon. I squeeze the juice over the hot grilled zucchini and mix the zest into the creamy yogurt base.
- Greek yogurt. An extra-thick yogurt makes the perfect tangy, smooth base for the grilled veggies.
- Garlic. I finely grate one clove to give the yogurt an extra kick.
- Feta. Sprinkle the platter generously with the feta for tangy, salty flavor.
- Mint leaves. Theyre a delightful fresh garnish for the bright zucchini and tangy yogurt.

The first step in this recipe is to prepare your marinade, which is a blend of olive oil, fresh lemon juice, dried herbs, garlic and seasonings. Youll want to let your zucchini soak up the marinade for at least 20 minutes, but its better if you have the time to let it sit for at least 2 hours. After the zucchini has marinated, it goes onto the grill I use my charcoal grill, or if its not grilling weather, I opt for for my indoor grill pan on the stove.
How To Grill Zucchini And Squash
Now, lets get to the grilling! Grilling zucchini is very simple as long as you pay attention to the thickness of your zucchini slices, grill temperature and general timing. Heres how to grill zucchini :
- Slice zucchini. Cut the zucchini lengthwise into 1/3-inch-thick planks.
- Whisk the olive oil, lemon juice, lemon zest, garlic and seasonings together ina freezer size resealable bag. Add the zucchini and turn to coat. Marinate for 20 minutes at room temperature or up to 2 hours in the refrigerator.
- Preheat a grill to medium-high heat. Thats about 400 to 450 degrees. Clean the grill with a wire grill brush and generously grease with oil.
- Grill on the grates for 3 minutes per side, turning once. Cook just until crisp tender, dont overcook!
Serve immediately. Transfer the zucchini to a platter. For extra flavor, brush with some of the marinade left behind in the bag. Dig in!
