Yes, and for some reason. Salmon in foil needs more time to cook because, in this case, your fish cooks over indirect infrared heat. Aluminum foil doesnt let most of the convectional heat pass through. As a result of indirect infrared cooking, your salmons sealed juices dont escape and are retained in the fillets. Salmon is more yummy and delectable when cooked in foil.

How To Grill Salmon Like A Pro

Now that youve selected the perfect cut of salmon and seasoned it, its time to heat up the grill! The best method to barbecue salmon can be broken down into a few simple steps:

  • Preheat your grill to medium to high temperature around 400 /205 .

  • Season the salmon thoroughly and oil the cooking grids. Be sure to fully preheat the grill to prevent sticking.

  • Put the skinless side of your salmon fillet first to get beautiful grill marks. On the other hand, if you prefer crunchy and crispy salmon skin, you can do that side first. Ensure that there is an ample amount of space between each salmon piece when placing them on the grill to make sure they are cooked evenly.

    How Do I Know Salmon Is Done

    Cooked salmon will always go from a vibrant pink color to more of an opaque color when done.Use an instant-read thermometer is key! If Ive told you once, Ive told you a thousand times. It takes the guess work out of is it done or not. This is the thermometer I use, it has a probe and build in USDA doneness temperatures for every protein, including fish. If you dont have that a simple eye test will work flaking the fish with a fork or the skin will pull away from the flesh as well.

    Grilled fish is cooked when it is 145°F, but remember youre food will continue to cook once youve pulled it from the grill or oven. Transfer your salmon from the grill when it reaches 125°-130°F, then let it rest for a few minutes and serve! I love to top mine with a juice of fresh lemon juice to brighten up the fish.

    • Remove the belly area that has bones. This is typically the area where silver skin can be seen. We slice along the top of it to keep a nice uniform shape.
    • Remove the pin bones if it has not already been done with tweezers.
    • Slice the salmon into four equal filets around 6 8 ounces each depending on the size of the salmon. Pat the salmon dry with a paper towel and prepare to season.

    Chefs Tip on Bone-In Salmon: Ask your fish monger or butcher counter to remove pin bones. Pin bones are not fun to pick through. Any good monger or butcher will do this for you.

    If you use the tail end, leave that filet slightly larger to get the same weight and note that it will cook faster than the center cut. There is no need to marinade or brine the salmon.

    Kabobs: Cut your salmon into one to one and a half inch cubes and marinate for 30 minutes to an hour. Thread marinated salmon and veggies onto skewers and arrange salmon kabobs on hot grill grates. Close the lid and cook for three to four minutes per side until theyre opaque, flaky and tender.

    Cedar Plank: Cedar planks insulate delicate fish from the direct heat of the grill, allowing it to steam gently in the heat of the grill, staying incredibly tender and moist. It picks up smoky flavors from the grill and woodsy flavors from the cedar, along with the liquid you soak the planks in.

    Grilling Basket: Keep your salmon from falling through the cracks with a non-stick grilling basket that has a locking lid. Place salmon in the basket and set the basket on top of the grates. When its time to flip, you can flip the grilling basket with worrying about your fish falling apart.

    Foil: Grilling salmon in foil helps to protect your salmon from the intense flames of the grill while still providing that great chargrilled flavor you want. Place the fish in the center of a sheet of foil and add seasoning. Fold the foil over the top and mold the foil into a sealed packet. Set it on the grill grates and cook over indirect heat for 10-12 minutes. After letting it rest for five minutes, open carefully to avoid hot steam as it escapes the packet.

    When Is Grilled Salmon Done

    A common recommendation for fish is that its done when it flakes easily with a fork, but its also easy to overcook it this way. For best results, use a meat thermometer to ensure perfectly cooked salmon and check the internal temperature every couple of minutes after you flip it:

    • Medium rare 125 degrees F
    • Medium 130 degrees F
    • Medium well 140 degrees F

    Let the salmon rest for 3-5 minutes before serving, as the internal temperature will rise 3-5 more degrees while resting.

    If you dont have a meat thermometer, though, you can use my time estimates above and flake the edge of the fish with a fork to test for doneness.
