When the cod is cooked just enough, it releases from the grill grates, making it easy to flip. But if you touch it before that time, it can stick and break apart. You dont need to oil the grill grates. Just lightly oil the fish, and when cooking wait until the cod is easy to release . Then its easy to flip!

Use Aluminum Foil To Protect Your Cod On The Grill

There are a few ways to use foil when grilling your fish, but arguably the best technique from a flavor perspective is to create a pouch by folding the foil around the cod loin and securing the edges so you have an enclosed cooking surface. This foil packet acts like a little flavor bomb, with all the marinade, seasoning and fresh flavors locked up so your fish can really absorb the goodness.

In addition to enhancing and really marrying your fish with the flavor of the marinade, using an aluminum foil packet will also help maintain the consistency and texture of the fish. No using tongs to flip your fish or scrape it off the grill grates, which can lead to premature flaking or even dropping a piece of freshly grilled fish into the flames.

How To Make Lemon Pepper Grilled Cod In Foil

Instructions

1. First, preheat the grill to medium. It will not take you long to prepare the fish!

2. Next, lay 4 large squares of foil on the countertop. Cut the butter into 4 sections and slice the lemon into rounds. Place one tablespoon of butter and one lemon slice in the center of each piece of foil.

3. Be sure to thoroughly yet gently pat each fish fillet dry with a paper towel. Then lay one fillet over the slices of butter and lemon on each piece of foil.

4. In a small bowl, mix the lemon pepper, garlic powder, and paprika. Sprinkle generously it over the top of each fish fillet.

5. Pull the two opposite sides of the foil up over the cod, and fold the foil down twice to seal the top to make a pouch. Then flatten and fold the two ends together, twice, to make the foil packets airtight. You want to make sure all of the steam and flavor stays locked inside!

6. Place the foil packets on the hot grill, and cover the grill for 8-10 minutes while the fish cooks.

Promptly remove the fish from the grill when done. Once the foil is cool enough to touch, open the packets and serve warm.

Pro Tip: Perfect white fish should be slightly opaque and easily flake with a fork when done.

  • Make the sauce. Combine the yogurt, mayo, a squeeze of lime juice, and chipotle chili powder in a small bowl. Whisk to combine and adjust with more chipotle or lime juice as desired. I usually go a full 2 tablespoons of lime juice because I love the acidic punch from the sauce!
  • Sear the fish. Combine the garlic powder, ground cumin and tajin seasoning in a small bowl. Pat down the cod loin/pieces until dry and sprinkle this seasoning all over to coat all sides. Heat a skillet over medium-high heat. Add a drizzle of oil and cook the fish for 3-5 minutes per side until its opaque and no longer raw in the center. Flake the fish with forks.
  • Make the slaw. Combine sesame oil, lime zest, juice, orange juice, seasonings, minced serrano pepper, and agave in a mason jar or a small bowl. Taste and adjust with agave or salt as desired. Toss the cabbage, red bell peppers, onions, and cilantro in a bowl. Pour the dressing on top and toss to combine. Taste and adjust with more seasonings as desired.
  • Load it up. Heat the tortillas over an open flame that the only way I do it! Then top with the prepared slaw, flaked fish, and pour the sauce over the fish. Serve with lime wedges to squeeze on top and enjoy!

    How Long To Grill Cod

    It will take approximately 15 minutes to cook a cod fillet that is around 1.5 inches thick.

    As you likely know by now, each piece of meat or fish will cook just a bit differently, so you should always cook to temperature and not to time. Cod fillets are not always perfectly consistent in thickness, so I highly recommend taking the temperature of each fillet, and removing them from the heat when they reach an internal temperature of 145 degrees F.

    Thicker pieces of cod will take slightly longer to cook, so give them as much time as needed to reach doneness. You definitely dont want to be serving or eating undercooked fish!

    • Switch up the seasoning. If you are not a fan of paprika or garlic, then feel free to use any other seasonings that you love. Some other great options include, lemon pepper, Cajun seasoning, 7-Spice or even just salt and pepper.

    How To Make Cod On The Grill

    Start Your Grill – Heat an outdoor grill to medium-high heat .

    Measure foil – Tear off a large piece of foil. There should be one piece of aluminum foil for every cod fillet .

    Place the fish – Place several sprigs of fresh herbs on each piece of aluminum foil and then place the cod fillets on top of the herbs. Sprinkle the salt and pepper across the cod fillets.

    The herbs and cod should be placed so they will be in the center of the packet.

    Make the butter sauce – Melt butter and combine with diced shallot, and minced garlic in a small bowl. Pour mixture across the fillets. Place several lemon slices across the top of the cod.

    Grill the fish – Close the foil packets around the fish – fold foil towards the center and crimp edges of foil to seal packets. Reduce the grill to medium heat. Place the cod foil packets on the hot grill rack, if possible not directly above any flames. The fish will cook best with indirect heat – so place it to the side of the flame. Cook for 8 to 10 minutes or until the fish flakes apart.

    The fish will be cooked when internal temperature of cod reaches 145 degrees F.

    Serve – Remove the packets from the grill and place the cod on plates. Top with additional fresh herbs if desired and serve immediately.
