While you wouldnt steam your steak, steaming fish is a great option and one that helps to prevent the fish from drying out. Using a foil packet is one of the easiest ways to ensure that your fish is moist and tender. To do, youll want to stack a couple of sheets of foil. For the top layer, coat the center with some cooking spray. Next, youll layer the ingredients on the foil, such as lemon or thinly sliced veggies. Bring the shorter ends of the foil together and make sure you leave enough room in the packet so that steam can gather, cooking the fish. Next, youll fold the foil over, pinching it to seal it. Place the packet on the grill over medium heat, if youre cooking on a gas grill. For a charcoal grill, youll place the grate approximately four to six inches from the coals. The grill should be covered and allowed to cook until the packet contents are done, which will be around eight to ten minutes. To remove the packets from the grill, youll need some oven mitts or a large spatula. Open the packets with caution since the hot steam that escapes can burn your skin.

Tips And Tricks For Making Grilled Fish Fillets:

  • You have a lot of options when it comes to what kind of fish to grill. I tend to stick with less expensive fish like tilapia, catfish, cod, and pollock. All of these firm white fish are mild tasting and really easy to throw on the grill.
  • Dont under salt this recipe and dont forget the lemon. Because it is so simple, they really bring the needed acid and salt to a simple fish recipe.
  • When buying fish I like to find wild caught fish and I prefer when they are individually sealed if frozen. That way I can take just the few I need out of the freezer while the rest stay frozen. I have great luck buying high quality fish at Costco.
  • Dont skimp on the oil. It help the fish to not stick the grill.
  • No outdoor grill? Ive had great luck making this recipe on a grill pan inside.
  • I love this fish recipe with really simple sides like corn, green beans, and watermelon. Its also great with a side of crusty bread, with some simple Santa Fe Rice, any of these 8 pasta salad recipe, or served with roasted vegetables. You cant go wrong with any of those!

How Long Should I Bake Fish

Grilled Whole Fish

As a rule of thumb, you will want to bake a steak or fillet of fish at 450°F for 4 to 6 minutes per half-inch of thickness. A pan-dressed fish, or whole fish, will need to cook at 350°F for 6 to 9 minutes per 8 ounces of fish.

The above guidelines will produce perfectly flaky fish. Be careful to not bake too much longer than this as fish can dry out quickly.

How To Cook Fish On The Grill

The first step when grilling anything, especially fish, is to preheat your grill on high. This does a number of things. Bringing the grill up to temperature will help in caramelizing the fish and provide the defined grill marks that supply the immense flavor all grillers love.

Having the grill preheated will also lessen the amount of time your fish is on the grill, resulting in less opportunity for your fish to dry out. Lastly, preheating the grill will prevent the number one fear for fish grillerssticking.

Even though fish is very lean, it will naturally release itself from the cooking grate when it is finished cooking if the grill was preheated correctly.

Another constant when it comes to grilling fish is the temperature. Whether skin is on or off, the temperature should be at a medium to high heat, depending on the recipe, around 400-450 degrees Fahrenheit.

Now that your grill is preheated, youre almost ready to start grilling your fish. The last thing to do is clean the cooking grates with a stainless-steel brush to remove all prior cooking debris that may still be left over.

Just a good rule of thumb, clean cooking grates are a necessity no matter what you are grilling to aid in easy removal of your grilled cuisine.

If youve experienced fish sticking to the grates in the past, chances are you didnt preheat your grill to the correct grilling temperature, or clean your cooking grates properly.

    How To Pan Fry Fish

Pan frying fish is a great way to get a crispy skin or crust on your fish without completely submerging your fish in oil. Its another high heat method to cooking fish, but unlike broiling, you can keep an eye on your fish through the entire cooking process.

You have the option to bread your fish prior to cooking or simply cook it as is. Pan frying involves placing the fish in a hot pan that is coated in a type of cooking oil or butter.

The best way to ensure that you get an evenly cooked fish with crispy skin is by scoring the fish. This involves creating a hatched pattern on the skin side of your fish. In order to do this, you should make about ¼ inch deep cuts, lengthwise and crosswise, creating ½ inch diamonds or squares across the skin side of the fish. This will help prevent the fish from curling and encourage the fat to render, leaving a crispy skin.

If your fish has the skin on, it is best to cook it skin side down first and flip it after it has cooked about halfway through. Its best to use pan frying for fish pieces that are less than 1½ inches thick.

Using The Foil To Your Advantage

When grilling fish, you can lay it straight down on the grates to get some nice grill marks on the flesh and crisp up the skin nicely. To do this, you have to make sure you have very clean grates before laying the fish on them.

You also have to make sure that the fish has a thin layer of oil on the meat before laying down. Sometimes if the grill is not hot enough, the fish will stick to the grill and tear up the filet in the end.

To get around almost all of these problems you have when grilling fish, you need to learn how to use foil in the cooking process. Foil will become your best friend when grilling fish, whether you use it as a surface or if you wrap the fish in it.

Your fish will not stick to the grill anymore, and you will end up with a great finished product anyone could be proud of.

Similar to baking fish, broiling is a relatively healthy way to prepare your fish since it does not involve a lot of additional fat or oils. As a bonus, its a much quicker cooking method than baking.

The downside is that not every fish is great for broiling. Only fish with a higher fat content can be exposed to high heat without drying out. Therefore, fish such as salmon, halibut, mahi mahi, and trout work best in the broiler.

  • General Tips When Cooking Fish

While there are several ways to prepare seafood, there are a few general guidelines that you should follow regardless of the cooking method. To ensure that your fish is cooked all the way through, the FDA recommends that it is cooked to an internal temperature of 145°F. You can check the internal temperature of the fish throughout the cooking process by using a meat thermometer. Keep in mind that the fish will continue to cook when you remove it from the heat source using its retained heat so its typically best to remove it from the heat source before when the temperature hits 135-140°F.

If you dont have a meat thermometer on hand, you can tell that a fish is cooked when the flesh is opaque and flakes easily with a fork. For shellfish in the shell like mussels, clams and oysters you should cook until the shells open.

We recommend the tips above as opposed to relying on cooking times and temperatures since every appliance heats a little bit differently. However, we have listed some estimates for cooking times and temperatures in this article.

Another tip to consider is to leave the skin on during cooking. The skin can add additional flavor and helps hold the fish together during the cooking process.

Regardless of if you leave the skin on or not, make sure to completely dry your fish before cooking for best results. A quick and easy way to do this is to pat the fish dry with a paper towel before cooking. This will also help provide a better texture.

How Long Should I Grill Fish

Take your fish out of the refrigerator 5 to 10 minutes prior to grilling to let it come to room temperature. You will want to leave your fish on the grill for 8 to 10 minutes per inch of thickness. Make sure to preheat your grill to 400°F to 450°F and always grill with the lid down.

Make sure you are only touching the fish when you want to flip it halfway through the cooking time. Continuously flipping it or poking it will cause the juices to leak out. Let the fish rest for 3 to 5 minutes after grilling so the fish can reabsorb the juices.
