An Easy Marinade For Grilled Chicken Breasts

Smoked Chicken Thighs

For 4 chicken breasts I like to combine the following ingredients in a ziptop bag:

  • 1/2 cup olive oil
  • 1 tsp. dried thyme leaves
  • 1/2 tsp. garlic powder
  • 1/4 tsp. coarsely ground black pepper

You could use a mixture of lemon juice and white wine vinegar, or just cider vinegar instead of the lemon, if youd like. And you can use a different herb. This one calls for thyme, but dried oregano and dried rosemary are also really nice.

Combine those ingredients in a zip top bag. Then add the chicken to the bag and seal it. Refrigerate for 30-60 minutes or overnight. Remove chicken from the bag, discard the marinade. Grill the chicken according to the instructions below.

Okay, now that we have the prep for our chicken breasts done, its time to learn how to grill them!

Because of the dark meat and bones, you want to wait until the internal temperature is 180 °F to 190 °F before taking them off the grill. 165 °F is safe, but at 180 °F the meat tastes much better, and it will be tender.

What Is Direct And Indirect Heat

Temperature control is essential when grilling chicken and learning how to use heat zones is important. Direct heat exposes the meat to the direct fire and flames, whereas the indirect heat uses the heat of the grill away from the hot coals and flame. The indirect heat cooks meat slower and more evenly, and the direct heat is great for creating sear marks.

Chicken breasts that have been pounded thin, chicken tenderloins, and wings are great for grilling over direct heat. Thicker chicken pieces such as a whole chicken or bone-in thigh will cook best over indirect heat as it needs more time to cook through.

Often, the best way to grill meat is start it on the direct side to sear the meat and get those lovely grill marks and moved to the side of the grill where the indirect heat is to continue cooking through.

What I actually like to do the most is to add garlic powder to the brine mixture. You can also add black pepper and other seasonings too. In that way, youre adding flavor like a marinade would while brining.

The only thing to note is that you dont want to leave the chicken in the brine anywhere near as long as you would in a marinade. The most youd want to leave them in there for is 3 hours or 5 hours . Then take them out of the brine and refrigerate them dry until youre ready to cook them.

If you would prefer to not brine your chicken breasts, you can do a marinade instead.
