How To Make Hamburger Patties
However you choose to season, wait until just before you plan to throw those bad boys on the grill. If you want that tender, juice-down-your-chin bite, restrain your salt and pepper shaker until just before you toss them on the grill.
This allows the rub time to adhere to the meat without starting to dry out. Add any additional rubs or seasoning according to taste.
After seasoning, its time to get in the thick of it. Dont overwork your burger. For a tender and moist burger, we advise you dont over pack your meat. Using wet hands, gently form the meat into 1 ½-inch patties but dont overwork it. This isnt Play-Doh, and the more you handle and squash the meat, the tougher it will be.

How To Season Burgers
A big burger deserves big flavor, but that doesn’t mean you need to go bananas with the seasoning. When you’re working with high-quality meat, sautéed onions mixed into the patties just aren’t necessaryand that goes double for raw onions. Other things to leave behind: egg, bread crumbs, cumin, garlic powder, taco seasoning, etc. It’s not a meatloaf, people!
Two seasonings you should incorporate: salt and pepper. Avoid mixing these seasonings into the burger meat, however, since adding salt to ground beef prematurely can toughen it. Instead, season the patties with ample kosher salt and freshly ground black pepper after theyre shaped and right before you plan to take them out to the grill.

How To Make Grilled Bacon Cheeseburgers With Coca Cola Onions:
Cut the onions into ¼ inch rounds discarding the root and skin. Separate the rings and set aside. Place a large skillet over medium heat. Once hot, add the olive oil, onions, salt, and pepper, stir to coat the onions in the oil and seasonings. Cook, stirring occasionally for 15 minutes until the onions are translucent and starting to soften.
Add the Coca-Cola to the skillet and stir to combine.
Continue to cook until caramelized, browned, soft, and almost all of the liquid is cooked out, 15-20 minutes. Take off the heat and set aside.
While you are cooking the onions, make the burgers. Add the ground beef, bbq sauce, garlic powder, onion powder, salt, and pepper in a large bowl.
Mix until combined. I feel using my hands makes it easier to mix.
Divide the meat into 6 even portions and make them into patties, make an indention in the middle of the burgers so they dont plump in the center while grilling, place on a sheet tray until ready to grill.
Preheat the grill over medium-high heat. Once hot, add the burgers, cook for about 5-8 minutes on the first side.
Flip them over and continue to cook until your desired temperature is reached. Do not overcook, at 165°F they are well done. Take off the heat and add a slice of cheese to each burger to melt.
Place the bottom of a brioche bun on your serving plate. Top with the lettuce and a slice of tomato. Add a burger patty followed by a piece of bacon broken in half so it will fit. Top with the Coca-Cola onions and add the top bun.
How Long Should You Cook A Turkey Burger
Its all about timing. You have to let the turkey burgers set up in the grill at the right time. If you cook them too early, the burgers will be dry and leathery. If you cook them too late, theyll be cooked through. The cooking time for a turkey burger depends on a couple of factors, including the size of the burger and the temperature of your grill. For example, a turkey burger should cook for 4 to 6 minutes on one side and 3 to 5 minutes on the other side.

Preheat Your Grill To Medium
To cook burgers on a charcoal grill, first light the coals and let them burn until theyre covered in gray ash. Then, place the burgers on the grates and cook them for about 4 minutes per side. Be sure to flip them carefully so they dont fall through the cracks! Once theyre cooked through, remove them from the grill and enjoy!
Choose The Best Burger Meat
Ground chuck is a great all-purpose, buy-it-anywhere choice for burger recipes. Whatever you do, look for beef with a fat content of 20%. That 80/20 ratio is the key to a perfect burger thats juicy but not greasy. Want to try a custom blend? Go for it. Ask your butcher to grind part chuck with short ribs or brisket and live your most bespoke life.
Not grilling beef patties? The alternatives are endless: chicken burgers, turkey burgers, even salmon burgers! Opt for dark meat poultry, fatty fish, or ground pork or lamb shoulder . Note that the poultry or seafood patties should be cooked through completely. Medium-rare is not a good look on a chicken or fish burger. Otherwise, the rules below should apply to these as with any beef burger.

How To Cook Frozen Hamburgers On The Stove

Cooking On A Blackstone Griddle

Raichlen suggest starting by scrubbing your grill grates with a grill brush to remove any built-up residue from past meals. Then oil the grill by dipping a folded paper towel in oil and using grilling tongs to rub the oil soaked towel on the grates.

Choose The Right Meat
When it comes to beef burgers, you want a meat that isn’t too lean so the burgers will have the best flavor and stay juicy. While I prefer lean ground beef for other recipes, when making burgers my preference is 80/20, or 85/15 at the most. Freshly ground beef is best. You can even ask the butcher at the store to grind the meat fresh for you, or do it at home using a meat grinder and using sirloin, chuck, and/or brisket, which all have good flavor and a good fat to meat ratio.

Best Tips For Cooking Burgers On The Grill

How To Grill Burgers On Gas Grill
If youre grilling with gas or propane, all the same rules on patty selection, shaping, and seasoning apply. Your temperatures, times, and flavors are going to vary, though.
For medium-rare burgers on a gas grill, youll need to cook for around five minutes each side to get that nice, red inside. Medium burgers will take six minutes per side, and medium-well needs seven minutes. If youre measuring by internal temperature, you can still reference our fancy table internal temperatures stay the same no matter how youre cooking.
Just like a Traeger, youll need your gas grill setting as high as you can make it but unlike a Traeger, even heat distribution might be an issue, and youll need to look out for hot spots .
If youre wondering what to expect flavor-wise, a gas or propane-powered grill is going to give you something very different than you might produce with pellets. You wont get that amazing smokiness cooking with gas, but you will get a fiery taste thats a bit more neutral. Most grill masters will try to add liquid smoke to their gas grilled burgers to try and mimic the effect normally in the marinade or by adding the right sauce after taking them off the grill.
If youre cooking with gas, you should always grill burgers with the lid closed. This will prevent flare ups, cook your burgers faster, and deliver a lot more consistency.

Set your gas grill temperature to high heat and give it a few minutes to warm up, or prep a charcoal grill for direct heat. Brush off those grill grates to remove any stuck on bits and use a paper towel, tongs, and neutral oil to slick them up so your burgers dont stick.
The total time it takes to grill your burger will fluctuate based on your grill temperature and the size of your burger patties. Whatever your idea of a done burger is, use the timing suggestions below as a guideline for your cookout, not a rule.
- Medium-rare: 67 minutes total
- Medium: 78 minutes total
- Medium-well: 9 minutes total
- Well-done: 10 minutes total
While approximating grill times can definitely help you grill hamburgers to temp, using an instant-read thermometer to check the internal temperature is the surest way to know that your burgers are cooked to perfection.

Other than occasionally checking the temperature, leave the patties alone once they hit the grill, aiming for one single flip halfway through the cook time. Resist the urge to press on the patties, which can cause flare-ups and lead to dry burgers, and you won’t be sorry.
