Ironically, these special pork ribs arent really ribs. Crazy right?

Theyre actually super tasty cuts of pork shoulder (you know, the kind that are usually cooked for pulled pork}.

The pork meat has enough fat and marbling to keep it moist while cooking and because its way meatier than the regular pork ribs, they are more filling.

Plus, they usually ring cheaper than your usual rack of baby-back ribs, making them a much bigger bang for your hard-earned dollars!

Set Up Indirect Grilling

Prepare your charcoal grill for indirect heat by placing a drip pan in the center of your grill’s bottom, filled partially with water, then pile charcoal on either side of the pan. For a gas grill, turn on one side of the grill only.

Bring the temperature of the grill to about 250 F. Keep the lid closed and use the vents to maintain the grill’s temperature. Brush the grill grates for either type of grill with canola oil.

The Dry Rub Ingredients

I have experimented with various dry rub ingredients but I have to say that this mix is my favorite. All the components work really well together.

At the same time, this may seem like a lot of flavor addition, particularly if you are marinating the meat ahead of time.

In this case, I would suggest just using kosher salt, garlic powder, and onion powder in this mix. Whatever you do, though, don’t skip out on the rub completely!

Choosing The Grilling Method

There are a few different tactics that you can use when making grilled country style ribs.

The method that I used in this recipe is a low and slow cooking style. This is great for ensuring that the meat turns out nice and tender.

At the same time, it does mean that you have to cook the pork ribs for longer.

Your other option is to crank the grill up to medium heat or 350 F. This is great for getting nice and crispy layer.

Here, you should let the meat cook for about 5 minutes flip it over and cook for 5 minutes more. Then flip the ribs over and baste. Wait for 5 minutes, flip, and baste.

If you are looking for the best of both worlds, then you can start by cranking up the temperature to 350 F on the grill.

Let the pork ribs cook on each side for about 5 minutes. Then, turn the heat down and cook for longer at a lower temperature.

Start basting about 30 minutes before the meat is done.

The Finale: Plating The Ribs

Let the ribs rest for about 10 to 15 minutes before serving. A great way to plate them is to use a very sharp knife to slice the meat into tender, flaky, thick slices. Drizzle some of the hot sauce across the ribs.

Grill The Country Style Ribs Over Medium Heat

Turn the burners on your Weber gas grill to Medium and let the grill pre-heat for 15 minutes. I was cooking on my Weber Traveler and the temperature gauge was reading about 350F.

It will take about 35 minutes to grill these ribs at 350F and you should get similar results on a Weber Q, Spirit or Genesis grill.

Place the seasoned country style ribs onto the cooking grate and close the lid.

Every five minutes you will need top open the lid and use a pair of tongs to turn the ribs over. You will be getting some smoke from the dripping pork fat hitting the burner tubes but since you are cooking with medium heat you shouldnt have any real flare up issues.

After 30 minutes the ribs will start looking great and smelling amazing.

When the ribs reach an internal temperature of 140F you can apply a light coating of your favorite barbecue sauce.

After the ribs have been sauced closed the lid and let them cook for another five minutes until an internal temperature of 145F is reached at which point the ribs are done!

You will need to pay attention to each piece of meat while it is cooking. Usually the ribs are cut to uneven thicknesses so the thin ones will finish cooking sooner than the thick ones.

Remove the ribs from the grill and serve with potato salad, Cole slaw and baked beans for an easy weeknight barbecue feast!

I am always surprised to find a recipe that still only relies on time. I realize that this is how people used to do it in the old days but it is just not a reliable option.

The rate of cooking can depend on a lot of different factors. This includes the size and the thickness of the country style ribs. Each grill is different as well and can produce varying levels of heat.

This is why you should always use a meat probe to track the internal temperature. When the temp reaches 145 F, it is cooked all the way through.

If you want to ensure that you won’t overcook the grilled country style ribs, then you can take the meat off a little earlier.

This is because even once the meat is removed from direct heat, it will still continue cooking for a bit.

If you do take the country style pork ribs off the heat earlier, make sure to rest them for a bit longer as well.

These Grilled Country Style Ribs are first dry rubbed with a blend of ground cumin, oregano, black pepper and other warm spices before grilling. The exterior gets crusty and the tender interior is juicy. No typical BBQ sauce on these for an alternative, but feel free. Plus, no rib bones to deal with, just seasoned meat!

Typically my thoughts of any rib goes to a tender piece of meat, seasoned well and covered in a delicious, lip smackin sauce thats sticky and has a little kick. Well, like my Memphis Style Ribs, you dont always need to have a sauce on your ribs for a killer meal.

And it doesnt always have to have that Southern flavor either.

Take these Grilled Country Style Ribs for instance. I decided to go the Mediterranean style route for the dry rub, but feel free to use whatever dry rub suits you. For the mop sauce I just used lemon juice and a little honey.

No BBQ Sauce on this round of ribs, but again, feel free to use whatever you like. The cooking time on these will be the same.

In fact, if you are going all in with your dry rub, I would argue that your grilled country style pork ribs don’t actually need the sauce.

However, I feel that slathering the ribs in BBQ sauce gives it an authentic barbecue taste.

If you aren’t sure whether or not you should baste, I would be suggesting basting only half the batch. This will let you know which method you prefer.

You can also try basting the grilled country style ribs less. About half an hour before the ribs are done, apply a thin layer of sauce. Close the lid and let it cook for 15 minutes.

Flip the ribs and apply a thin layer of sauce and then cook for another 15 minutes. This will create a light glaze on the ribs but will not be overpowering.

I do want to give you a tip here, though, regarding the BBQ sauce. Now, if you have a favorite barbecue sauce, then you should definitely use it on the ribs.

In case you don’t, you may want to think about whipping up your own batch. I have found that nothing quite compares to homemade sauce. And, it doesn’t even take long to make.

In fact, you don’t have to use barbecue sauce if you don’t want to. There are lots of other options. Some people prefer a lemon honey basting liquid while others will go for something peppery and spicy. As such, you can experiment with various flavors and find out which one works for you.

How To Grill Country Ribs

Country-style ribs are great for the grill because they have enough marbling that they will stay juicy and moist.

Theyre also a fairly inexpensive cut, so they are great if youre grilling for a crowd.

The ribs should be cooked over a medium heat grill, around 350-400F for 7-10 minutes a side, depending on how thick they are.

Typically country ribs are often best to do low and slow, but keeping your grill temperature lower and cooking them for a little longer will help develop a nice crust on the outside and help keep the inside nice and tender.

The best way to tell if your country-style ribs are done is with an instant-read thermometer.

Youll want to remove them from the grill when they register 140-145F. Let them rest for at least 5 minutes before serving, so that they can get up to 145-150F, which is the recommended internal temperature for cooking pork.Remember, when cooking pork, a blush of pink is ok in the middle of the meat. You dont want to dry the meat out, and this is how you know you will have flavorful, juicy, and tender pork.

Best Internal Temperature For Boneless Pork Ribs

The FDA recommends grilling pork to an internal temperature of 145°F this will give you pork that is still a little pink inside. For pork without pink, I recommend cooking to an internal temperature of 150°F.

As always when grilling meat, let the meat rest for 5-10 minutes before serving. This is for two reasons. The internal temperature of the meat will continue to rise another 5-10 degrees once removed from the grill. Second, grilling over high heat draws juices to the surface of the meat, so by giving the meat time to rest, the juices can redistribute to the center.

Please keep in mind that this recommended internal temperature doesn’t apply to ground pork.

What are Country Style Ribs and How Do I Grill Them? Excellent questions. First off, they are the meatiest of all the pork ribs. They have more meat than all but the fattest baby back ribs. Second, there are two types of pork that are sold as country style ribs, although one is not a country style rib. The fake ones are cut from the pork shoulder:

True country style ribs are cut from the loin either from the rib end or the sirloin.

Some, not many, butchers sell them in slabs like this:

They also come boneless but I prefer them bone in as the best are the ones with this little bone:

So whats the difference? The ones cut from the shoulder that masquerade as country style ribs are full of fat and collagen. In order to make them edible, rather than a gummy wad of pork, they must be cooked to 200 degrees. The true country style ribs need to be grilled like a pork chop and are far healthier. They also cook much, much faster.

So Whats A Country Style Rib

True Country Style Ribs are cut from the blade end of the loin, close to the pork shoulder. They are meatier than other ribs, like baby backs or spare ribs and contain no rib bones, so they are all meat.

Some are often times cut from the pork shoulder but in traditional circles these are known as fake ones.

With the Mediterranean influence on these Grilled Country Style Ribs I opted to have a Shirazi Salad with Chickpeas.
