Prepping And Marinating Beef Ribs For Grilling

How To Make Ribs on a Charcoal Grill Easy

Prepping any meat before grilling is essential to get the best results. Here is how you can prepare your beef ribs before grilling:

  • Remove the beef ribs from the packaging.
  • Wash and rinse it out well. You can soak it in some vinegar water for a while to clean and tenderize it simultaneously.
  • Drain the water, and if it is a full rack, you can cut it up into pieces if you choose to. .
  • Pat the ribs dry to remove excess water.
  • Rub your marinade well on one side of the ribs, then turn it over and rub the marinade on the other side.

In your marinade, acidic ingredients such as vinegar, lemon juice, coke, etc., will help to tenderize your meat slightly quicker, making it soft and juicy.

That works incredibly well during grilling because the ribs can dry out quickly on an open flame .

Video #: Smoking Ribs With The Snake Method

This video is really different from the first video for two reasons. The first is that it shows you a completely different way of arranging the charcoal. This method is called the Snake Method or the Fuse Method. The second difference is that, after the ribs get plenty of smoke for the first couple of hours, they are wrapped in aluminum foil.

He doesnt really go into why the ribs are wrapped but pitmasters do this for two reasons. First off, wrapping the ribs in foil accelerates the cooking process and get the ribs off the pit faster. Secondly, wrapping the ribs helps protect the color and prevents them from taking up too much smoke.

Whether or not you should wrap your ribs and exactly how to wrap them is a matter of preference and debate. Dont worry about that part right now and instead take a few minutes to learn how to set up a snake!

How To Grill Beef Ribs In Foil

While many people like to grill beef ribs directly over an open flame, some genuinely prefer to use foil packets instead.

Grilling beef ribs in foil would follow a similar process as doing it without foil.

The difference is that you will need to place the marinated beef ribs on a reasonably sized piece of foil that will fold over and seal tightly.

You will then place the foil pack on the grill on indirect heat. The foil will trap steam and help the ribs cook much quicker without drying it out.

The meat will retain all its juices by absorbing it back while cooking, and you will end up with the most delicious, tender, and flavorful grilled beef ribs.

How To Prepare The Grill

Our main aim here is to turn our grill into a smoker. This actually takes a bit of skill because we need to keep a good, constant heat of about 250F/120 C. Not only will this require the use of a good meat thermometer, but also a little knowledge of indirect cooking.

If youre unfamiliar with indirect cooking, its a method that places charcoal lumpwood under one half of your grill grate, leaving the other side clear. You then put your meat on this clear side, allowing the heat inside the grill to cook it rather than the direct heat from the flames.

For a full guide check out my guide to indirect grilling.

With this approach, were going to be a bit creative and call on the help of a disposable aluminum pan. Were going to fill it with water and use it to add moisture to our grilling environment, in turn helping to regulate the temperature. More on this in a moment.

Make sure your BBQs grates and drum are both thoroughly clean before cooking. There are a lot of benefits to having a spotless BBQ, so if your grill is dirty then Id put aside half an hour to really clean it.

Once clean, remove the cooking grate and light the charcoal. There are a few methods to this, so if youre not sure how to do this then take a look at my guide on how to light a charcoal grill.

Youll need enough charcoal to cover half the grate area, and also enough to create 2-3 layers of charcoal.

    Prep The Beef Short Ribs

With any piece of barbecued meat, it pays dividends to invest a few minutes up front into preparing the meat for a long cook. With BBQ beef short ribs, theres typically not too much work to do, but lets cover some basics.

First, check for any loose or dangling pieces of meat or fat. These are sometimes a byproduct of the butchering process, and can dry out or burn over the course of a long cook. No need to go crazy detailed on this, but if there are any obvious offenders simply remove them.

Next, your short ribs may have a small fat cap on the top this is good, as it will help baste the meat during the cook and keep it from drying out. Give the fat a quick once over to check for any obviously uneven areas. Again, no need to be perfect here, but trim down any parts where the fat is super uneven. This will ensure that you dont get any cuts of your finished product with way more fat than meat.

Lastly, the underside of your ribs may have a thick, white membrane over them. If you can, slide a butter knife under this membrane and using a paper towel for grip, peel it off. Just like with baby back ribs, this membrane wont render quite as well as the meat, and could lead to some tougher bites when all is said and done.
