The Best Shrimp For Grilling

How to Grill Shrimp

Large shrimp are best for grilling, as their size aids in preparing them for the grill and from falling through the grates or overcooking. Large can be anywhere from U/10 but I tend to find 20/25 shrimp per pound to be the most readily available at most grocery stores.

Buy shell-on, tail-on shrimp and peel them yourself theyre usually cheaper and taste better. I always keep frozen shrimp on hand for quick meals, but if you can get fresh, local shrimp, seize the day and grill them.

How Do You Keep Shrimp From Sticking To The Grill

The most important step you can take to keep shrimp from sticking to the grill is to clean the grates before anything touches them. If you plan on marinating the shrimp, the oil in the marinade will prevent sticking. If youre just using dry seasonings, brush the grill grates with a little neutral cooking oil to help the shrimp release easily.

Signs That The Shrimp Is Well Done

Those who are new to grilling shrimp may find it difficult to tell when its ready due to the exoskeleton that prevents us from checking its meat. So we either end up with raw meat or an overcooked one. And you certainly wouldnt like it overly done as the heart will stick on the shell, leaving you with a more cumbersome task before you can have your dinner.

But this shouldnt be a guessing game. Luckily, this guide on how to grill shrimp in a pan comes with some tips, too! If you are grilling with shells on, you should pay particular attention to the abdomen, where the swimmerets are . This is the hardest part and takes a longer time to cook. This area initially starts translucent, and youll the shrimp is ready to be served when this turns opaque.

How To Grill Shrimp Just Right

First, make sure to thaw your shrimp the night before in the fridge. But if you forgot to do so, dont worry. Just run the frozen shrimp under cold water for 5-10 minutes in a colander. When theyre completely thawed, gently pat them dry with a paper towel. Then lets get grilling!

  • In a mixing bowl, toss the thawed shrimp with 80% of the marinade until theyre completely coated.
  • Timing is key. Let the marinated shrimp sit in the covered bowl for about 30 minutes in the fridge.
  • Pop on skewers. Thread the shrimp on skewers and brush some more of the marinade on top.
  • Its grilling time. Heat a grill or grill pan on medium-high heat. Then place the skewers on the grill for 2-3 minutes on each side. They cook fast, so keep an eye on them!
  • Drizzle. Transfer the skewers to a place and drizzle the remaining marinade on top for extra garlicky flavor.

    What Size Is Best

Large shrimp or jumbo prawns? This reference point whether on a bag or display is subjective, confusing and no real guide to the size on offer. Fishmongers grade shrimp by the number that you get to the pound weight so for example a shrimp graded 21/25 means that you get between 21 and 25 in 1lb.

Note:- Whist in the UK we use the metric Kg as the unit of measure for retail sales, the sizing of prawns is still done by the pound .

I tend to think of anything between 15 and 25 as large and ideal for grilling.

    Cleaning And Seasoning The Shrimp

  • 1Buy large frozen or fresh shrimp. Jumbo and larger variations of shrimp are the best for grilling because they wont fall through the grates of the grill and are easier to handle than smaller shrimp. Smaller shrimp are also more likely to overcook on the grill, which could lead to a rubbery or tough texture.XResearch source
  • Buy U/10 or U/20 shrimp. This means that there is either 10 or 20 shrimp per pound.
  • Cook fresh shrimp the same day that you purchase them or freeze them If you plan on making them later.
  • When you bring fresh shrimp home, keep them on a bed of ice so that they dont go bad.
  • 2Thaw the shrimp if they are frozen. You can leave the frozen shrimp in the refrigerator overnight, or rinse the shrimp under cold water for an hour. Once the shrimp are thawed, rinse them one last time under cold water and drain them in a colander. Then, use paper towels to pat them dry.XResearch source
  • When the shrimp are thawed, they should appear slightly translucent.XResearch source
  • 3Peel the shrimp if you have to devein them. Youll know you have to devein the shrimp if there is a black vein running down the back of the shrimp. Start at the top of the shrimp and cut through shrimps shell with a pair of scissors. You can cut all the way down the tail, or stop before the tail to keep it on. Peel away the excess shell and throw it away.XResearch source
  • If you keep the tail on, it can serve as your handle for dipping and eating the grilled seafood.

For The Best Flavor Buy Shell

If youve ever had shrimp cooked in the shell, youll know that the outer layer locks in all of the meats fullest flavors. Even if you dont plan on cooking or eating them that way, you should still seek out shrimp that come with the shell on because it acts as a barrier against spoilage and oxidation, keeping the meat firm and tasty.

Plus, shelled shrimp is generally more expensive, and theres a higher likelihood that its been mangled or mishandled somewhere along the line.

For the same reasons, you should also buy shrimp with the vein in and remove it on your own. Yes, deveining is an extra step, but the rewards pay off in a better-tasting product.

The more intact the shrimp, the less likely its been treated with sodium tripolyphosphate too .

    Selecting Shrimp

Have you ever wondered what the deal is with shrimp sizing? Theyre available in jumbo, large, medium and small, and although these terms are frequently used on packaging, shrimp are officially sized per pound. A good rule of thumb: The fewer shrimp per pound, the larger the individual shrimp. Refer to the chart below for more detailed descriptions of each size category.

    Count
    Fewer than 10 per pound
U15 Fewer than 15 per pound
    16-20
    41-50 per pound Small

Our favorite size for grilling is large . Theyre big enough to not fall through the grill grates, yet small enough to be tender and juicy.

To Peel or Not to Peel

I always start by buying shell-on shrimp, even if Im going to peel them myself. Theyre less expensive, and I find that they taste better. Plus, I get to keep the shells to make seafood stock.

Sometimes the tails are left on peeled shrimp. This is a matter of preferenceit gives the shrimp a nicer appearance, but it can make them a bit messier to eat.

    Make Sure Everything Is Prepared

Once you know how and where to find the freshest shrimp, it is time to decide on the preparation of the shrimp you are going to purchase. After all, you can get the entire shrimp, or you can save yourself some effort and buy them without certain parts. A few of the ways you can purchase shrimp are:

      • Whole Shrimp: These include the head, shell, and everything else.
  • Shell-on Shrimp: Shrimp without the head but with everything else.
  • EZ-peel Shrimp: Split and deveined for easy preparation.
  • Peeled and Deveined: Shrimp that are ready to use.
  • When it comes to cooking, picking the easiest one is not always the answer. Some dishes call for the head to add flavor or for the stock, and the shell can pack a delicious punch as well. Of course, you need to balance that with how much time and energy you want to spend working with the protein, but it is something to consider.
